Cube Steak with Tomatoes
There are a few tomatoes around from local greenhouses or Gilcrest Natural Farm when in season. Serves 4
4 Gilcrest cube steaks
1/2 cup water
1 lb chopped tomatoes and their juice, or a 1# can of petite diced tomatoes
1 medium onion, with tops if you like them
2-4 cloves of garlic
2 T fresh chopped herbs of your choice, such as rosemary, basil, oregano, parsley...
a splash of red wine, or substitute balsamic vinegar
In a large frying pan, brown the cube steaks on both sides over high heat, 1-2 minutes per side. Add 1/2 cup water, onion and garlic and scrape the pan to loosen any brown bits. Add tomatoes, herbs and wine, then cover and turn heat to low. Simmer for 30 to 90 minutes depending on what else is going on. Enjoy!
