Slow Cooker Carnitas


1 tsp sea salt

2 tsp garlic powder

2 tsp ground cumin

1 tsp dried oregano

1 tsp ground coriander

1/8 tsp cinnamon

2-3 pounds Gilcrest stew beef

2 bay leaves

1/2 cup beef broth or herb stock


Mix dry ingredients in a bowl and then layer the stew beef chunks in the crock pot with the spice mixture – first bay leaves and broth and then one layer meat and about 2 tsp of the spice mixture, repeat, ending with the spice mixture.  

Cover and cook on low all day, 8-10 hours.  Stir the meat and broth midway, after 4-5 hours.  When the beef is cooked and tender, use two forks to shred and pull it apart.  Reserve any liquid to moisten the shredded meat.

Serve on tortillas with cilantro, onion, salsa, guacamole, refried beans or the toppings you like.   Enjoy.
